Well...you know how you can dry food with heat, like fruit or meat? It's like that, except they do it with cold and remove the ice. Then you don't have to worry about keeping it frozen, and it's easier to store because it's smaller, so it's perfect for people who make long journeys through space!

My, that's fascinating. Where I come from — originally, I mean — we've only just begun to work out refrigeration for home use, so I can certainly see the practicality of such technology. Dried meats and such are commonplace... though I'd say pickling is probably the conservation method of choice.
